The open-kitchen restaurant leans on old-world cooking techniques — including an open fire and dry-aging cuts of meat — that Chef Jared Acorn describes as “keeping things simple.” If you’re looking for comfort food with full, rich flavours, fall is the perfect time to try their cowboy steak. “It’s a 35-ounce ribeye steak, bone-in, that we cook (ideally) to medium rare with local vegetables, potato and a little herb butter,” says Acorn.
